Ingredients

1 cup Sugar
3/4 cup Heavy cream
1/4 tsp Salt
1 Tbsp Butter

Simple Caramel Filling

This caramel filling is gooey and wonderful! The caramel oozes out of your candy and doesn’t get stuck in your teeth. The consistency is perfect for molded candies.

By adding another 1/4 cup of heavy cream, you could easily use this recipe for caramel sauce on ice cream!

Be creative and incorporate this recipe with other ingredients.  For example, I like to add chopped pecans to my molded cavities and top with caramel filling.  Let your imagination soar!

Steps

Place sugar in a medium sized sauce pan. Cook on medium heat without stirring.

Watch the outer edge of the sugar closely. As soon as you begin to see the sugar liquefy, start stirring the sugar using a wooden spoon.

Continue to stir the sugar as you watch it transform from sugar with some clear melted syrup to slightly golden gravel and eventually light amber colored syrup with only some chunks.

Once the sugar chunks have completely melted, continue cooking until you achieve a deep amber color.

Remove from heat. Add a very small amount of the heavy cream and stir quickly. The mixture will bubble up quite a bit but will settle down after a minute. Be sure to stir continuously or hard chunks will form.

Little by little, continue to add heavy cream while stirring. Eventually the mixture will stop reacting by bubbling up when heavy cream is added. At that point you can pour the remaining heavy cream in the pot.

Stir in the salt and butter.

Your caramel is finished! Pour in a heatproof bowl to allow the caramel to cool. This recipe makes about 3/4 cup.

Clean up

Your pot and wooden spoon will be covered in hardened caramel that is similar to concrete. The easiest way to clean them is to fill the pot with water and boil. Everything will rinse clean!
