Ingredients

5 Tbsp Butter
1/4 Vanilla bean (or 1/2 tsp vanilla extract)
1/2 cup Brown sugar
1 Tbsp Heavy cream
1/4 tsp Vanilla extract
1/8 tsp Salt
3/4 cup Flour
1 tsp Milk
1/4 cup Mini chocolate chips
Coarse sea salt or fleur de sel Sprinkling

Salted Browned Butter Chocolate Chip Cookie Dough Truffles

This recipe brings out fond memories of eating cookie dough right out of the bowl.  The browned butter adds the most wonderful nutty tone for a slightly more sophisticated note.  I’ve used this recipe for molded chocolate and truffles.  It works great both ways but my preference is using it for truffles, which can be sprinkled with sea salt or fleur de sel.  The salt brings out all the flavors nicely and balances out the sweetness.  This one is sure to please chocolate lovers of all ages.

Flour, brown sugar, heavy cream, vanilla, mini chocolate chips, coarse salt, butter

Browned Butter

Scrape the vanilla seeds from the vanilla bean (or substitute with 1/2 tsp vanilla extract).

In a small pan, add vanilla bean and melt butter on medium-low heat.

Stir constantly until the butter foams on the surface and turns an amber color. You will also notice it has a nutty fragrance with hints of vanilla.

Move butter to a heatproof bowl and place in the refridgerator for 30 minutes until it cools and firms up a bit.

Chocolate Chip Cookie Dough

Using a mixer, cream together the following ingredients: browned butter, brown sugar, heavy cream, vanilla extract, and salt.

Stir in flour. Add half of milk and evaluate if more is needed. The consistency should be firm and pliable enough to roll into balls.

Stir in mini chocolate chips.

Roll dough into 1 inch balls and place in refridgerator. If using molds, place entire batch in a piping bag.

Truffles

Dip chocolate chip cookie dough balls into tempered chocolate to form truffles. Sprinkle with coarse salt immediately while the chocolate is still wet.

Makes approximately 22 truffles or molded chocolate candies.
